I'm not sure a utility knife blade will be stiff enough for planing, most folks use something heavier like a chisel. With a reasonably massive blade mounted in a wooden body with no screw adjustment, the usual way to adjust cutting depth is with a light tap from a mallet. With my home-made rabbet plane I find I can just stand the plane on a flat piece of wood, lower the blade (chisel in my case) until it contacts the wood then set the wedge - called a chip - to hold it in place; usually it comes out about right depthwise, for a fine finishing cut.
