Strip: Installing and external stem accross the shearline

I’m building a Guillemot Double. It’s my first kayak project. I’ve stripped the hull and am starting on the deck. I plan to include an external stem, as described by Nick Schade. In his book Mr. Schade mentions that when installing external stems on the Double you may want to wrap them up over the front of the deck. This makes complete aesthetic sense. However, if the stem extends through the shear line, how does one separate the deck and hull for subsequent cleaning up, sanding and glassing? Would I cut the stem at the shear line and just re-glue it when the hull and deck are joined at the time of glassing?
