I have only built two kayaks, and I would recomend bead and cove for your first kayak. You will still have the opportunity to do a rolling bevel at the sheerline so you need to focus on making this one a perfect as you can. However, if you have a lot of decorative cuts and strips on the deck, it would be better not to do bead & cove to insure a tight fit, and because it can be complicated making the transition of the b&c on angled cuts. My second kayak had an acute angle fit for the sheerline (deck and hull), so to aid in having an accurate angled fit I did the following: My templates had hashes marks for the angle of the sheerline stations. I found the station that had the widest angle using an angle finder, and then ran the hull strip and later the deck strip through the table saw with this beveled angle. In doing so, I discoverd that about 50% were very close to the sheerline angle. The table saw bevel made it real easy to finish with rolling bevel on the length of the sheerline strips for the deck and hull, that results an almost perfect fit for rolling bevel.
