This is one of those little extra steps that will help your boat last. I do not leave any wood uncoated if I can help it. Once the boat is closed you will not be able to reach the stems inside so take care to seal the wood. Althogh the taping process may fill gaps and seal exposed wood pretty good from the outside, the inside near the stem is just a big ?.
