I am going to scarph a new gunwale to size, will then experiment with different jigs (or heck, may just chisel them out by hand, it is cedar after all) with some scrap to build up confidence. If I can get that to a point where I am willing to give it a go on the gunwales again, I will. If not, my backup plan is to run the ribs inside of the gunwales and add a 3/4 square inwale. Adding this inwale wouldn't change the outer dimensions of the boat at all, would make the gunwale slightly stiffer (I don't see this as a negative) but would add slightly to the total weight.
