Honestly, i'd rather build a fuselage (yost/kudzu) style, but I've not been happy with the extremely few plans of that type. (The parameters, that is, not the quality of design)

IMO, taking a building style that works OK for kayaks (skin compressing the frame) and using it for an open canoe (skin tension trying to splay open the canoe or pull down the gunwales) can be tricky.

How much weight do you think you will save vs strip building? Or is the 'lightweight' aspect not the important element?
