I ran into the same issue when finishing my Guillemot last year. I decided to epoxy in spacers while compressing with straps. I tuned this with some spacers on the hull. This worked great from the seam perspective. Everyone says the boat looks great. though, when I sit in it, I can see the slight bump. The joy of paddling in my own boat overcomes the visual impact of the slight bump.
