What would be the advantage of a wood block with stainless padeye vs making one out of maple or walnut along these lines?

Your pic shows the grain direction parallel to the base; I think that would be quite weak unless you made it very 'chunky, and even then I'd recommend a laminated design.
When (not if) you sit on the backband, there will be quite a lot of downward force on the padeye.
