The tubing you use should not be soft. Rigid plastic tubing, like the type used for refrigirator icemakers and water dispensers, would be good. The tubing doesn't have to be too small, but you want to make sure the cables glide smoothly through the tubing. Soft tubing (like aquarium tubing) has too much friction, and may cause binding. When you run the wires you can use bailing wire as a sort of cheap fish tape. Run the bailing wire through the tube, and then use it to pull the stranded stainless wire through.
