It sounds like the relative humidity in your basement is approaching 100%. I'd have two concerns.
One is amine blush which is a reacion between the curing epoxy and water or water vapor. While easily corrected by a thorough wash-down, I think I'd want to avoid it on my seal coat and also the first coat or two over 'glass, when the textured surface can make it harder to remove.
The second concern relates to a story Dave Kreiger from Danbury, CT told me about his stripper, which was stripped but not epoxy coated when his basement flooded. He said the hull curled up off the forms like a banana peel as it absorbed moisture. He also said that once he got the basement dried out he was able to get it back into shape on the forms.
