I've used 15 oz canvas on 3 kayaks all sewn with a center seam. George Dyson sells nylon and polyester fabric for kayak skins, the synthetics are rot-proof and tougher than canvas. I've switched to synthetics but canvas does make a good skin and is easy to paint. Using the center seam method takes much less fabric than the stapled method, there can be a few small wrinkles depending on the boat shape but tightness is not a problem.
