Translate a single in to a double?

Has anyone had any experience with translating single plans into plans for a double? I am thinking that scaling would be a safe way to do it, 10-20% bigger with everything. But I'm not sure how much is too much or too little. I am not sure if the boat would perform the same with the larger size. How would increasing the dimensions(length and width) by 20% affect the volume or displacement?

I am curious to hear what you all might have to say.
