Probably the most durable fabric for boat skins (unless you're willing to use 26 ounce ballistic nylon) is 13 ounce polyester coated with Gaco UA-7000 two-part aliphatic urethane. However, it will cost you ~$250 to skin a boat this way and the stuff is "challenging" to sew.
