Actually this has been done and discussed on this forum. I'm sure it would take a bit of searching but you can probably find the information that you want. There are many more similarities between a "fiberglass" boat and a strip or S&G boat. The biggest difference primarily being the core materials. Also...probably most of the "fiberglass" boats are made using polyester...though vinylester and epoxy may also be used. On a "fiberglass" boat the core will usually be a mat or added layers of cloth. The construction methods can basically be the same, or are at least adaptable. I see absolutely nothing wrong with your plan.
