You are exactly right in all respects. With care and experience you will soon be making pretty tight rolling bevel joints...inside and out. I find the bead and cove strips to be way too much trouble for way too little gain. Even using bead and cove you'll find yourself doing some rolling bevel strips. Don't let me talk you into anything. Do what you'll be comfortable with.
