Cove and bead is very popular with canoes since there's no pointed ends to the boat, the strips follow along on top of one another the length of the boat. But for kayak building there's pointed ends - so the strips have to end, often in a "V" shape to meet other strips. With cove and beed you have to make the "V" shape at the end into cove and beed with a rat tail file and rounding over the next piece. So the ease that you would think C & B is bringing to the project suddenly makes you actually work harder to make "V" shaped fits. Kayaks also have sharp chine and shear curves that canoes don't have and C & B pushes the bend to the extreme - so if you sand in a bit too deep you will see spaces. Plus milling C & B is a time-consuming project in itself.

I have done both and find C & B a lot more work. But some people may be really good at it and if that's the case with you, stay with what you like.
