I wouldn't be too worried about appearences just yet, alot of things change once you start to sand. Just keep the joints tight and you should be fine.

The second problem needs to be fixed though. If your forms are set up right but you don't follow them, you are building a different boat. For the problem areas on my project I used a band clamp with some blocking to help hold everything in tight to the forms. With a little fiddling you can get the clamp set up so that you can add a few strips without removing the clamps, and once the glue has set the spring back will be greatly reduced. Another option could be to use screws to hold the shape (suggested by some one here when I had the same problem), drill a slightly large hole through the strips at the offending form and use a washer or even a block of wood to spread the clamping force, fill with a dowel plug just before sanding. Also check out some of the clamping systems used by the guys who build stapleless, there may be one that will work for you.

If you do try to wet and bend the area, expect to have to reglue some or all of the strips. It may work out for you, but if you plan on the glue failing you won't be surprised when it does.
