Well, the reason behind this is to smoothen the curves for better shape. You can turn it off by using creased edges and selecting corners.

I myself thought the FreeShip is one of the most simple. Just move the dots and the hull is there. Real work is a little more complicated but there are just couple rules to follow. If you are unsure ask from this (or some other) forum and I'm sure you'll get some feedback.
