As pro sail maker for years, you are entering in to details about sail making I worked on, The camber of the sail is decided by seam take up, the relation of the luff curve to the mast bend and case of full battens, the taper and stiffness of the battens. The battens are softer bending at the luff end. Batten tension also effects shape. The bias stretch of the cloth also affects shape. There was a sail maker the used full size molds to set seam taper, you could use cardboard to build it or double stick tape and 3 mil plastic drop cloth as a mock up, just use in light wind test. I would think that sailing a kayak with using full battens you maybe over thinking this , it is a kayak and not a sailboat.
