If you built a S&G previously, the only new obstacle is in doing the lofting. I am not familiar with the book in which the offsets are included, but if it does not explain the lofting process, check out Nick Shades book "the strip-built kayak" as he explains the lofting process and makes it quite easy.

I highly recomend the book. Who knows, you may be converted to a strip builder after looking it over.
