Hopefully it has just been too chilly for your epoxy to set fully yet. There is no such thing as mixing too little to set if the ratio mix is right. If you still have the epoxy in the cup here is what you can do. Take a heat lamp or even a heat gun and heat the epoxy really hot. Let it cool down. If it's OK it will harden quickly and you will know your joint will finally harded. If it stays rubbery then you have a problem. But even if the scarf joint doesn't set up, perhaps you can double reinforce that joint with glass if taking it apart is really going to be a big problem.
