I had to build a special frame around the stern piece of my boat to keep it from bowing while I stripped it. I heard a story from another builder that stripped the entire left side of a boat first and the entire right side of the boat later; ended up with a situation like yours. He was able to ratchet the hull straight again.

My guess is you could build some sort of torture device that pulls the hull back into shape long enough to put several layers of glass on. I don't know all the details but I would wet it down first and ratchet it into alignment over a period of time. The glass may hold it pretty well and, who knows, you may get off the hook.
