I paddled both models up in Port Townsend, and ended up getting the Tern. But the decision was so close that it was almost a coin toss. Personally, I'd love one of each. The Tern seemed slightly more manueverable (just as Pygmy claims). The Coho's front deck was a little lower (which I liked). Both now have the rear recessed coaming, which is great. A more expert paddler than I might tell you that there is some difference in initial and secondary stability. But I couldn't tell much difference. The Tern will go together a bit faster because it has fewer panels (I've also built an Osprey double, so I can attest to the fact that the multichine--especially 20 feet of it--involves noticeably more time during the paneling joining and stitching stages; but otherwise, the construction is identical). Here's what I'd advise: (1) Call Pygmy and talk to them. Their answers to your questions might tip the balance for you; (2) If nothing Pygmy or anyone on the forum says helps you to decide, then base the decision on the model you think is best looking. Whichever one you build, once you've paddled it a bit, you'll acquire a good feel for it and it will seem responsive and sweet. So on second thought, maybe my strongest advice is just to base your decidion on looks. You'll have a great kayak and you'll love gazing at it. Besides, eventually, you'll probably do what a lot of us have: build more than one (I'll be on my fourth one this spring). You can get the other model then!
