Andy,

Stripped kayaks aren't the common choice for taking-apart construction.
This could be best done perhaps with a pull-saw.
For airplane transportation the favorite boat is the skin-on-frame folding kayak, which is a fast and very light craft, allowing for a minimal cost on a plane, especially with aluminium paddles. (Maybe interesting tips from the Folbot forum).
Take-apart stitch-and-glues are available from Volkskayaks (the Volkskomponentkayak) in kits, or at the shop with a little help from the kayak maker if you're lucky.
The additional weight shouldn't be colossal, since you'd just need to add another pair of bulkheads, epoxy them, and a dozen fastening bolts and plastic washers. A three-parts project would have better proportions and would be more practical i-m-h-o.
The question will be for you to decide wether you'll stick to the strip and hard way, or take the easy way. I admit nothing looks better than a stripped Guillemot!
