Epoxy: Chemical Stripping

Hi,

I built a nice stitch and glue kayak a while back and was talked into finishing it with a water-based crosslinked marine polyurethane clear finish. It is tough, but lacks sheen and has a whitish haze to it. Also does not self-level well, so brush marks (even from foam brush) abound. I compare it to my more recent boat that I finished with spar varnish, and I am now intent of removing this finish and replacing it. I wondered what advice people may have for chemical strippers with respect to epoxy. Many strippers warn against contact with plastics. This polyurethane is too hard to sand all the way back.
