Hoz,
You're the 4th guy this year who came here wanting to jump into this type of construction. I sure would like to know how the first 3 made out. Especially the guy who was doing a 100% Kevlar hull. I'll bet he's still trying to sand all those little yellow tassels off.
If you built a stripper you know what it takes to do a single 'glass lamination. Are you ready to do 4 or 5 laminations in a single day? Can you dragoon someone to help with all the squeegie work and a third person to mix all the epoxy you'll need?
All this is spelled out in the book,"Building Your Kevlar Canoe" by James Moran. I suspect that the reason there are so few homebuilders devoted to this technique is that the few who have busted their keesters doing it don't want to think about it ever again.
