The varnish is for UV protection. I aim to get the maximum thickness for the least work. ie the fewest coats. I hang the boat from the ends as in the photo, start at the bow and roll the varnish on with a foam roller (west system roller) working accross the grain and tip off with a quality varnish brush along the grain. I work around the whole boat (deck and hull) at once and do about 2 to 3 feet at a time depending on the width of the hull at a given point.

I don't try to catch sags. it only draws attention to the problem area.

I don't sand between coats. The varnish I use can be overcoated for a chemical bond for ages.

If you are going to use the boat it is going to get battered in any case. The odd fault will be noticed by you and absolutely no one else.
