They are normally ripped from dressed 4/4 stock. Commonly 4/4 softwoods are planed to a thickness of 3/4 inches, but that is not always the case. The thickness can vary. Thicker boards will give you wider strips. Some cedar boards are sold with only one face planed. The other face is left rough. Ripping these will give you slightly wider strips, but if you put bead and cove edges on these strips that rough edge is removed during the milling.

If you use bead and cove strips the effective face of the strip is reduced by the (approximately) 1/8th inch that the bead nests inside the cove. if your plain strips start out as 3/4 inches wide, you'll have an exposed face of just 5/8 inch.
