There are a lor of differnt ways to do this . could you be more specific?

Most of the man-made deck materials I've seen are composed of very long chain molecules (that is good ol' plastic) and is thus very dense, hard to cut, hard to drill,rather heavy, not about to be bouyant. If you have found something different you'll have to tell us, ecactly, what is called.
When it comes to withstanding flexing (which is part and parcel of SOF design)nothing beats good old wood.
If Inuits that lived on rock strewn shores could get enough wood for a kayak you can too.
