I like to use Epiphanes rapid clear to build up quick coats of varnish without sanding. Then I will sand and add several more coats of high gloss to give it the shine. Once epoxy is hardened and inert, any varnish will do. I caution against using cheaper brands from local paint or hardware stores as they just don't hold up.
