Here is what I would do to keep it light with strength where needed.

1) Use 4 oz S-glass
2) 2-3 inch strip 4oz fiberglass cut on bias along keel and stems maybe even a second strip on bow stem
3) Glass inside of cockpit
4) Glass exterior after you have smothed rough edges of keel & stems strips.
5) Final 2-3 fill coats of epoxy mixed with graphite on bottom of kayak (Do not varnish graphite areas)

this will give you a strong but light layup. Of course you will need to properly fill coat/s after glassing then sand and finish
