You know, it seems that the places who show up when you do a web search are the ones least likely to have what you want. Like- in searching for VG figured maple I get shops selling like, a 3/4" 6"x14" piece for $45. I guess there are a lot of hobby guitar builders and the like who might actually spend that much, but that's 10x more expensive than highly figured FS maple, and it's not even lumber- it's an offcut.

This is proving to be a bit more difficult than I thought... Not the spruce. Considering the scarcity of spruce and abundance of maple, I would have thought it was the other way around.

What sort of project are you planning?
It sounds like a violin project? Archtop mandolin?
I've built a few instruments (violin, guitars-a bunch, even a lute) and there's so much work involved that moving away from the 'board-foot-pricing' mindset may be helpful. If you are going to be putting many hours of labour on a violin top or back, saving a few dollars on the wood may not make a lot of sense. (And using the right species (of maple and spruce) is fairly important as well- in terms of workability and the sound of the finished instrument....).
That said, contacting some of the bigger instrument wood dealers directly and inquiring about 'student grade' or 'seconds' is one way to get cheaper wood. Most dealers have a good supply of 2nds that they don't necessarily list on the website.
That said, I've found some decent wood on the beach on one occasion - but using 'mystery wood' adds to the challenge.
