Uncle Nick makes a great case, as does Uncle Jay (such a wise and wonderful family we have!), but I'll go ahead and add a couple more comments to the mix.

First, if I had a dollar for every horror story I've heard of hapless noobies posting for advice on how to deal with various end pour disasters, it would be lobster for dinner tonight, served by waiters in tuxedos. I think end pours should perhaps be language given only to more experienced epoxy-wranglers, and make it carved cedar blocks instead, or nothing at all for lightest weight, then move on to end pours only when one better grasps schmutzology.

Uncle Jay makes a particularly good point I believe ought to be mentioned more: namely, that the pointy ends of boats are naturally very strong, and rather need little additional reinforcing unless you specifically require bashability. This includes canoes and those infernal internal stems (Uncle Rob has wise words to say about internal stems in canoes).

To answer a direct question, carving cedar blocks is pretty easy, and begins the same as all carving and sculpting does: by first cutting the shape in plan (top view), then profile (side view) or vice versa, then "whittling off everything that doesn't look like an elephant". It doesn't have to be exact, that's what dookie schmutz is for. But having said it, I quickly add that I shall be revisiting this whole deal in light of what has been presented on this most excellent thread.
