On my S&G kayaks I prefer bulkheaded front and rear compartments with deck hatches. And when paddling open water or solo, I back up both compartments with flotation bags.

I installed bulkhead hatches on my first two S&G kayak. I have quit doing so because if you ever get water in the compartment when out on open water it is next to impossible to empty even with help from other kayaks. Think about opening the front hatch while swimming and then doing an TX rescue. I have seen a S&G deck seam rip during a 20-mile open ocean crossing and fortunately the kayak had deck hatches to provide pump access. The rear bulkhead right at the back of the cockpit opening is a big help in draining the cockpit during rescues. And the front bulkhead near or used for the footbraces keeps the cockpit volume to a minimum, which is good when having to bail out water.

Floatation bags are a wise backup for a sock.
