Hi Mike,
Infusion molding and vacuum bagging are super interesting but I would not go down that road on a wooden build. First, you can do a good hand layup with mininimal practice and a fraction of the materials. Second, you are not likely to get the intended results on the first one. Third, you will have bag wrinkle cosmetics to deal with after. I have access to a friends shop who bags about four boats per week and I would not use it for a wood build for the above reasons.
Vaccuum pressure on an infusion build is around 27 lbs. A few pounds less for bagging so you can move the resin.
Sorry to be negative but unless you are building production boats in a mold, you could not justify stocking resin tracks, vaccuum tracks, peel ply, sticky tape, etc.. Worst case scenario is, the bag has a small leak, pressure won't build, all attention goes to finding and patching the pinhole that is introducing air, and then there is a chance that the resin will kick before it is evacuated. You may end up with a heavy throw away part which is just material in a production boat but hundreds of hours on a wood build. It is a lot like making waffles without experience.
