S&G: longer gillemot, and which kayak for small person

Hi Guys.

I've decided to build the Stitch and Glue Gillemot for myself. I've also decided I'd like to extend the kayak by 17inches. I'm assuming that will give me a bit more cargo room for camping. Thoughts and advice on this are welcome.

Question 1, is a fiberglass layer recomended on the inside of the hull? Or is the outside good enough? what about the deck?

Question 2. My wife weighs 100lbs... any sugestions on a good kayak for her? wanting good tracking, lightness(is that a word?), and high initial stability (she swims like a rock). Stich and Glue or Cedar strip construction, skin on frame are all options. I'm looking for an as is design, I'd rather not try modifying anything for her boat.

She will not be out on purpose in rough water, and will be limited to lakes, and day trips.
