Hi Patrick,
If you do a CAD profile of the kayak, you could find the centriod of the underwater profile and the overwater centriod with your profile added. This will give you the pressure centers of each and they're location to each other.

If they line up vertically, you have a wind neutral kayak.
If the underwater center is ahead of the above water center, it'll weathercock.
If the over water center is ahead of the underwater center, it'll leecock.
Any additions to the deck is a function of the added area and the distance from the combined centers.
