Skin-on-Frame: building a take apart SOF

Hi paddlers-builders !
I'm in the project of building a skin on frame outrigger canoe for 3 paddlers. Those boats come 34' long more or less, won't fit anywhere in my garage or house.
So I was wondering if I could build skin on frame hull in 2 or 3 take apart pieces, with plywood bulkheads bolted together at the joint.
What about stiffness ? strenght ?
After all, each part could be seen as a whole single kayak.
I see this roughly as a very long and slim baïdarka, am I wrong ?
