Besides being ungodly expensive it certainly isn't necessary. You want a skin that is watertight but is also flexible enough to give when your frame gives. Thats easy and relatively cheap to do.
There are builders that are covering their SOFs with epoxy/glass but it is a recent phenominon and I would be hesitant to duplicat it with something as expensive as carbon fiber till there is evidence there is something to be gained on a par with the money spent.
