Carbon cloth seems ridiculously expensive, and I'm not sure what you would gain by it, the epoxy needed would make it heavy and it would be very stiff.

It's perfectly doable, you can skin a SoF kayak with pretty much anything.

The most popular options seem to be PVC, Nylon or Polyester, but really, anything can be used, there's people who use Canvas, and personally for my latest kayak I'm using a cheap tarp.
