Only two cents worth from me, but polyester stretches less than nylon - wet or dry.
Also, using thicker line (1/4 vs 3/16 for example) will reduce the stretching problem a bit, as will pre-stretching the line before putting it on the boat.
Climbing accessory cord/line is designed to stretch (absorb impact); most of the 'yachting' aka dinghy sailing lines are low stretch- even the cheaper types.
