I was going to go with flush hatches but two things stopped me.

Number 1, I was concerned about the hatches being water tight, the methods I've seen involved cutting and glueing a lot of ply to make something that the hatches could sit in. I figured that raised hatches would give the shock cord more leverage, producing more downwards pressure on the seal. The webbing straps I've seen people use would recitfy this, however, I think untying three straps every time I wanted to open a hatch would soon become a pain in the ass. Much faster to simply unhook the bungie. (yes, I am impatient).

Number 2, Not only do I have a bit of a low spot in the hull, I've also got one in the top, about half way between the front of the cockpit and the bow. This is purely the result of the scarfs in the ply, it seems the scarfs stiffen the ply (3.6mm) much like a batten in a sail, while it bends nicely at the scarfs, it won't twist. By having raised hatch covers I could cover it up by positioning the foward hatch at this low spot so nobody will ever know (except everybody who reads this, oops).

After cutting out the hatches I steamed some thin strips of wood and bent and glued these around the hatch opening, leaving a bit over 1/2" protruding through the top (you have to run a narrow strip the same thickness as the ply around the opening before you put the strip on (the hatch cover must be bigger), bent some more strips and glued these around the hatch cover leaving exactly 1/2" protruding below. I finished this by running a 3/4" strip of veneer around the top of the hatch cover (so you can't see where the edge strip is glued to the hatch cover). I'll varnish the veneer, the strips, and the cockpit coaming steamed wood), and paint the rest of the boat white (white will help the rescue choppers see me ;-).
