I'm also a fan of lighter weight - I get much more use from mine if it's a pleasure not a chore to get them out. I've only used 4mm so far, but that is for the open sea with big waves. IMHO 3mm would be fine for yours.
The only thing I'd change is that I'd always use at least 2 epoxy coats to seal anything I wasn't glassing, not just one.
