I've played with very limited projects using the process. Currenly due to sound requirements I'd have to use a "real" vacuum pump which I don't have (arn't real cheap). You can use a wet vac to provide enough vacuum if you allow some leakage into the hose to cool the motor (most are cooled by airflow thru the vacuum). Down side is most wet vacs are fairly loud running specially for the hour or so required.
I've got Gougeon's book, don't think there's much in it about vacuum bagging. There are fairly inexpensive instruction available though, recommend Soller Composites, they have an inexpensive guide for vacuum bagging at around $5, also great source of materials.
