I hope Kyle will chime in, but we emailed some and his doubles were being paddled by big strong adventure racing types. If I remember correctly he had 3mm decks. He said in practice there was "creaking sounds. So they glassed both sides of the deck that solved it. That is why I say your going over board.

But it's your boat and it just what I think. :) I don't want you tell me how to build my boat. BTW I built a kayak years ago our of door skins. One layer was fine. 200# wouldn't have started to flex that deck and it had no bulkheads.

I will add that in every forum be it wood boats, kayaks, woodworking or aquariums, people want to overbuild. Hopefully Kyle will read this and chime in. He has the experience and not just opinion.
