I used doug fir for my gunwhales, keelson, and stringer. The ribs and coaming are made of clear white pine. All of it was kiln dried, so for bending the ribs and coaming stock were soaked in a length of 4" pvc pipe filled with water for a minimum of 24 hours. No breakage occurred.

This winter I'm gonna do SOF canoe and the ribs will kiln dried oak.
