:Couple of points:

Are the wires copper? Either way they need to be pushed down and tightened before it is ready for epoxy. Otherwise you will have a very heavy boat if you try to cover those lumpy wires. Locking the wires really does alot to stiffen the hull.
Often I have had to rewire a stern or bow to insure a plumb end. In doing so if one panel is a little longer than the other (at the ends only) you just plane it after the inside epoxy is set.
On boats with high ends I have used temporary braces (4' sticks)screwed from the bow or stern to the bench to insure no twist. Or epoxy the bow and stern separate from the main hull.
