Here's an idea to play with, if I can make sense...

Control groove has a lip to capture the knob. A hole at the fully extended position allows access to the setscrew that is in the backside of the knob from the inside of the boat (allen head screw, so fairly small hole). When the skeg is completely raised, the knob is 1 knob-thickness back from the front of the box. That part of the box has no ridge to allow for knob insertion/removal when disconnected from the cable. You could make a lovely wooden knob for this, with a stainless insert for the cable and threads of the set screw. Set screw would be invisible on the back side of the knob.

I think I can sketch this out if it doesn't make sense and is intriguing.
