The strong back doesn't really need to be straight.
Only the forms above the strongback.

Correct.
I'm lucky to have a straight aka flat strongback, so I can use a constant distance above the strongback as a reference.
If the strongback sags, I'll adjust my method.

I would add that the form centerlines don't have to be plumb, and the waterlines don't have to be level, either. As long as they are aligned with each other the boat will be OK.
