A very simple alternative is to hold the lamination, with carbon cloth on top, in place with 2" wrapping tape, from the underside of the deck over the rim and to the deck. It holds everything in place and forces out excess epoxy (though naturally not as effectively as vacuum) but has the disadvantage of needing a little sanding afterwards. I do this on my rim laminations...
